Sometimes all you need in life is a giant chocolate chip cookie. This is an ooey, gooey, melty pan of deliciousness that’s even better when topped with ice cream. To make it even better, it’s a giant cookie so you can eat the whole pan and still say you ate “just one” ;)
I first bought a cast iron pan so I could cook steaks without using a grill. Then I realized the world of possibility which exists when you bake dessert in one. This is a one pan recipe since you mix everything in the pan, throw it in the oven, and voila!

Skillet Chocolate Chip Cookie
- 1 cup butter
- 1 cup brown sugar
- ½ cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 cups + 2 tablespoons flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¾ cup milk chocolate chunks
- ¾ cup semi sweet chocolate chips
Preheat oven to 325 F.
In a 12-inch cast iron skillet, melt the butter on low heat. Add the sugars, stir until glossy.
Let cool slightly, then stir in the eggs and vanilla. Mix in the dry ingredients until combined.
Mix in the chocolate chips.
Bake about 25 minutes, or until the edges of the cookie are lightly golden brown. The middle will be gooey and that’s ok! Top with ice cream and enjoy.
